1lb/450g medium sized courgettes 3oz/75g plain flour salt and freshly ground black pepper 1 level tsp. cayenne pepper
Instructions
1) Slice courgettes thinly. Mix flour with salt and freshly ground black pepper and cayenne. Dip the courgette rounds into seasoned flour and shake off excess. Fry in batches in shallow hot oil until just browned and crisp. Drain on kitchen paper before serving.
