Oven-Poached Fresh Herring

Ingredients

1 kg (2 1/4 pounds) fresh herring
1 tsp. salt
1/4 tsp. pepper
1 onion
4-5 black peppercorns
1-2 bay leaves, crushed

Instructions

1) Preheat oven to 150 C (300 F)

2) Scale, clean & rinse the fish. Bone & cut into fillets.

3) Sprinkle fillets w/ salt & pepper.

4) Roll them up, beginning at the tail end.

5) Place tightly together in a jar.

6) Peel & slice the onion. Place between & over the herring rolls. Sprinkle w/ peppercorns & bay leaves.

7) Cover w/ lid or foil.

8) Place the jar on a towel (to keep it from moving) in an oven pan. Add hot water to reach halfway up the sides. Bake 10-12 min., until the fish is done.

9) Serve directly from the jar w/ rye bread, boiled potatoes & horseradish cream, or w/ sour cream & chives. Enjoy!
